Jungle Pesto

Visit the Feria Agrícola y Artesanal de Puerto Viejo on a Saturday morning and stop by Christina’s booth from Talamanca Organica Cacao & Fine Chocolate. Not only will you be introduced to the amazing chocolate she produces on her farm, but you may be able to find some katuk leaves. Katuk has a nutty flavor and packs a lot of protein in one handful. Bring them back to the kitchen at UP! HOUSE Costa Rica to make a delicious and simple meal.

Ingredients
  • 2 cups of katuk leaves, de-stemmed (save the flowers for garnish)

  • 10 cloves of crushed garlic

  • 1 cup grated parmesan or bagaces cheese

  • 2 tablespoons fresh lime juice

  • olive oil (just enough to move the food in the blender)

  • salt (to taste)

  • pepper (to taste)

Now...blend!!!

Add all of the ingredients in a blender and blend until well combined. Toss over cooked pasta and enjoy!
